(2 Recipes) Garlic Mashed Potatoes with Mushrooms Gravy

Mashed Potatoes Recipe:


Ingredients: ~ 10-11 medium yukon gold potatoes (unpeeled)

4 tbsp of vegan butter or ghee (if not vegan)

6 cloves of garlic, minced

Pink himalayan salt (to taste)

Ground black pepper (to taste)


Instructions:

  1. Wash the potatoes and place them in a large pot along with enough water to cover the potatoes. Add a pinch of salt and bring to a boil. Then, reduce the heat to medium-high. Cook for about 25-30 minutes until they are tender. Check with a fork and see if it pierces through the potatoes easily.

  2. Meanwhile, sauté the minced garlic with 1 tsp of vegan butter or ghee on a pan until they are soft and golden. Careful not to burn them.

  3. Once the potatoes are done, drain them and set aside for couple of minutes, allowing the excess heat to evaporate.

  4. Using a potato masher, mash the potatoes until the desired consistency. Then, add the vegan butter or ghee, garlic, salt and pepper. Combine them well using a wooden spatula.



Mushroom Gravy Recipe:


Ingredients:

300g cremini mushrooms, chopped

2 cups of vegetable broth

3 tbsp of avocado oil or ghee (if not vegan)

1 onion or 2 shallots, sliced

3 cloves of garlic, crushed

1/4 cup of dried thyme

1-2 tbsp of tamari sauce (gluten-free soy sauce)

2 tbsp of potato starch

Pink himalayan salt (to taste)

Ground black pepper (to taste)


Instructions:

  1. Prepare the mushrooms, garlic and shallots.

  2. Heat the avocado oil or ghee on a small saucepan at medium heat. Add the onion, garlic, a pinch of salt and pepper. Sauté for about 1 minute.

  3. Then, add the mushrooms and dried thyme into the saucepan. Stir and cook until the mushrooms become tender.

  4. Now, add the vegetable broth and tamari sauce. Stir until well-combined. Then, mix in the potato starch to create a thick consistency of a gravy. Reduce the heat to low-medium and cook for another 2 minutes.

  5. Serve on top of the mashed potatoes.
