I love summer but this has been such a hot summer. When I was in London not too long ago, I noticed all the grasses were yellow and burnt!
Cool yourself down with this vegan ice cream recipe that is light and creamy. Key ingredient? You guessed it... Bananas! Banana is a great substitute to get that creamy texture and plus you don't need to add sugar or sweetener to make the ice cream sweet.
So why is it called "nice" cream? Because it doesn't contain milk from cows, where the cows are forced to get pregnant so they can produce the milk, which we greedy humans then take. Sad, but true. However, we can make a difference. No matter the scale. Even if you think, you can't stop 100% eating non-vegan ice cream yet, at least you can limit yourself and try this recipe! On top of that, after you eat this nice cream, you will not get that heavy feeling that you'd get after eating a non-vegan ice cream! :)
Go ahead and try this recipe! It's really perfect for this heat! It's so simple. You don't need a lot of ingredients.
3 frozen ripe bananas
2 tbsp of plant-based milk (I used rice coconut milk)
1 tbsp of raw cacao
1) Blend all of the ingredients together until you get a creamy texture
2) Transfer mixture in to a stainless steel ice cream tub, then place in a freezer for at least 1 hour or can leave overnight
3) Serve with your favourite toppings! I like to put nuts. Nuts and chocolate makes a great combination. Here I've put nuts and puffed rice. Tip: Leave the nice cream in room temperature for about 5-10 mins if the nice cream is too hard to scoop.
