Gluten-Free Banana Choco Nutty Oatmeal

Ever since I started making my own nut butter at home, I can't stop! I love nut butters. The texture and taste. Also, I can put them in pretty much everything: oatmeal, smoothie, on top of my baked sweet potato, in a dessert...the options are endless! Nuts are a great source of protein. Making nut butter at home is definitely much better than buying the ready-made ones at the supermarket because you can control what you put inside. Those commercialized nut butters that they sell at the stores tend to contain a lot of sugar and oil. Also, if you make your own, you add that extra ingredient: love! ;) The energy that you have when cooking/making food, really does transfer into it, which then transfer back into us as we consume the food.

In my opinion, you can really taste the difference between a homemade nut butter and store-bought one.

In Barcelona, every Sunday, the local vendors sell their products near by the Barceloneta beach. It is always nice to appreciate their work and products. They really make their products with such passion. So last Sunday, we went to buy a vegan chocolate bar made out of 70% cacao, sea salt and olive oil. The taste was surprisingly delicious! I decided to put it on top of my warm oatmeal and the mix is incredible! The chocolate becomes so melty. I absolutely love.

Recipe (serves 2)

1 1/2 cup of gluten free oatmeal

3 cups of coconut milk

1 tbsp of 100% raw cacao powder

1 tbsp of maca powder

1 tbsp of chia seeds

1 tbsp of homemade peanut butter

1 tbsp of chia seeds

1 sliced banana


Sliced banana

Homemade peanut butter

Cacao nibs

Salted vegan chocolate (70% cacao)

  1. Heat a small/medium saucepan.

  2. Put all of the ingredients inside the saucepan.

  3. Let it cook at a medium heat until the oatmeal is soft.

  4. Serve with the toppings on top!
