Are you looking for a healthy treat? These are great as snacks and desserts. The next time you have a party, inviting your friends over, watching a football match or perhaps your kid's birthday party and are looking for some snack ideas, make these! They are so easy to make, tasty and guilt-free!
But please remember, don't eat them all at once! Share them or store it in the fridge for your little snacks. Just because I said they are a healthy snack, doesn't mean you should eat them all by yourself in one day ;) Everything in moderation.
The caramel is made out from coconut oil, date syrup, peanut butter and 100% raw cacao powder! So not the traditional caramel you'd know.
3 cups of puffed rice
1 cup + 1 tbsp of smooth peanut butter
3 tbsp of coconut oil
1.5 tbsp of 100% raw cacao powder
4 tbsp of date syrup
Line an 18cmx18cm (or similar) baking pan with baking sheet
Melt the coconut oil
On a small bowl, mix the coconut oil and cacao powder together
On a separate large bowl, stir together the peanut butter and date syrup
Pour in the mixture of coconut oil & cacao in the large bowl together with the peanut butter and date syrup mixture
Using a spatula, fold in the puffed rice with the liquid sticky mixture until it’s well combined
Transfer into the lined baking pan and place in a freezer or refrigerator. (Freezer: approx. 30 minutes or more Refrigerator: approx. 1 hour or more*)
Take out from the refrigerator/freezer, and cut into small squares. If the rice crispy treats are too hard to cut, leave it out in room temperature first for about 10-15 minutes.
Store in the refrigerator to prevent it from falling apart
*The time it takes for to firm up, depend on your refrigerator's or freezer's potency & temperature.
