Peanut Butter Vegan GF Brownie

For those that have been following me, you should know by now how much I love peanut butter and any other nut butter. But the peanut butter that I am talking about is the one that is 100% made of peanuts. I like to make mine at home because it really tastes much better than store-bought ones. So I am not talking about peanut butter with added sugar or non-sustainable palm oil. If you do not want to make your own peanut butter, not to worry. There are some really good brands available at the health food stores. Just make sure you check the ingredients list first, and you want it to only contain 100% peanuts and nothing else!




Weekends are made for winding down, just really taking the time to relax, spend time with your loved ones and a time of reflection after a busy week and before a busy week ahead. In the weekends, I love to really take my time cooking something new and tasty.

Recipe

Servings: 12-16 squares

Ingredients:

Dry Ingredients:

1/2 cup of Dove's farm gluten-free self-raising flour*

1/2 cup of 100% raw cacao powder

3/4 - 1 cup of coconut sugar (I used 3/4 cup but if you'd like it a bit more sweet, you can add up to 1 cup)

1/4 tsp of salt

1/4 tsp of baking powder

Wet ingredients:

2 flax eggs (mix 2 tbsp of ground flax seeds + 5 tbsp of filtered water, and let it sit for 10mins)

1/2 cup of extra virgin coconut oil (melted)

1 tsp of vanilla extract (or vanilla bean)

2 tablespoons of water

1/3 cup smooth peanut butter


Instructions:

  1. Preheat the oven to 180 C (about 350 F).

  2. Once all of the ingredients are prepared, in a large mixing bowl, combine all of the dry ingredients.

  3. Add the wet ingredients (except for the peanut butter) into the dry ingredients. Mix all of the ingredients together using a whisk to create the batter.

  4. Pour the smooth peanut butter on top of the batter and swirl using a toothpick.

  5. Transfer the batter to a 20cm x 20cm (8inch x 8inch) baking pan (or similar).

  6. Bake for about 20-25 mins.

*Dove's Farm Gluten-Free self-raising flour: If you are living in Barcelona, Spain, you can find this at the health food store, Obbio. If you are living elsewhere, please check your nearest health food store or you can buy them through the Internet (e.g. Amazon).

Another option is to make your own gluten-free flour blend; use Minimalist Baker's gluten-free flour blend recipe (WITH xanthan gum).
