Vegan GF Fluffy 3-ingredient Pancake (with a chocolate surprise)

This recipe is probably my favourite pancake recipe because it is so simple, yet so delicious. For 2 of the pancakes, I stuffed it with chocolate to make it more interesting. You can choose to do this or not. Chocolate is always a nice surprise. The recipe below makes about 8 pancakes, so I recommend to just stuffed 2 of them with chocolate, or else you will have a chocolate overload in the morning. But of course, you may also stuff all of them with chocolate.

I have said in my other vegan pancake recipe post that it can be difficult to make a vegan pancake fluffy, but here, I have proved myself wrong.

All you need is 3 ingredients: banana, any plant-based milk and gluten-free rolled oats.

And for the chocolate surprise, then you will also need at least 70% dark chocolate bar (vegan/dairy-free chocolate).

Servings: 8 pancakes


1 cup of gluten-free rolled oats

2 medium bananas

105 ml of plant-based milk (I used rice-coconut milk) Optional (for stuffing with chocolate): 2 squares/pieces of 70% dark chocolate bar


  1. In a blender, blend all of the ingredients together until you get a thick creamy texture.

  2. Heat a non-stick pan on medium heat. Then, using a ladle, pour the batter onto the pan, cooking one pancake at a time. Once the bubbles start to appear (about 1 minute), flip and cook the second side for 45 seconds to a minute until golden-brownish. Repeat this process for the remaining batter. With a chocolate-middle-surprise: Heat a non-stick pan on medium heat. Then, using a ladle, pour the batter onto the pan, put a piece of chocolate in the middle of the batter, and then top it with some more batter to cover the piece of chocolate. Once the bubbles start to appear around the edges (about 1-2 minutes), flip and cook the other side until golden-brownish.

  3. Serve with your favourite toppings (fruits/nut butter/maple syrup), if desired, or serve with no toppings.
