Vegan & Gluten-Free French Toasts

I know what you're thinking French toast without egg??

I wanted to try making a vegan French toast to see how it would turn out. And it actually turned out to be really good! But I'll leave you to be the judge of it! So go ahead and give it go. It doesn't hurt to start something new ;)



Recipe:

Ingredients:

3-6 slices of gluten free bread (I used Schar Deli Style sourdough)

1 flax egg (1 tbsp of ground flax seeds & 2.5 tbsp of filtered water)

1 cup of unsweetened plant milk (I used rice & coconut milk)

1/2 tbsp of maple syrup (or honey, if not vegan)

1/2 tsp of vanilla extract

1/2 tsp of cinnamon powder

1 tbsp extra virgin coconut oil

Optional Toppings:

Nut butter

Maple syrup

Jam

Fruits


Instructions:

  1. If the bread is not rustic, then toast it for 1-2 minutes so that it doesn't turn out soggy when dipped in the mixture

  2. Mix all of the ingredients (except for the bread) in a shallow bowl

  3. Dip the bread one by one in the mixture with a fork for a few seconds to allow it to soak

  4. Heat a pan at medium heat and add the coconut oil, allowing it to melt

  5. Place the bread on the pan and cook carefully each side until it turns golden brown

  6. Serve with your favorite toppings! (I put sliced bananas, chia seeds and Meridian cranberry sauce)
